Youth Farm has been busy all week at Lyndale School, culminating in today’s Food Day.

On Monday Lyndale Elementary students spread compost in their farm site during recess and planted a few perennials before the winter hits. Yesterday was the first day of our afterschool class in partnership with Minneapolis Community Ed. Our class practiced knife skills then made the last fresh salsa of the season with Youth Farm tomatoes, tomatillos, cilantro, jalapeños, and bell peppers. Next week we will embrace the season with kale chips.

The MPS Nutrition Services is spreading our love of local fresh food to students everywhere. Today students celebrated Food Day by eating locally grown Kale Apple Salad. Youth Farm recognized brave and healthy eaters with “I Ate Local Food Today” stickers. We also sent youth home with the recipe and over 20 lbs of kale grown in Lyndale. Thanks Lyndale School and Nutrition Services!
